This is the Washed processed lot from one of our favorite washing stations in Rwanda, Bumbogo. The elegance and complexity of the cup profile for this coffee once again stood out for us from this years Rwandan harvest and we are excited to be working with this washing station for the second time. The cherries are first fermented to help break down the excess mucilage, and sorted into different density grades. The highest density grades are trapped in the serpentine channels, sorted once again to ensure no insect damaged beans continue and then placed on raised drying beds, being turned on a regular basis until an adequate moisture content is achieved. The meticulous work results in a clean and sparkling cup, showcasing our love for the Rwandan flavour profile.
